Allulose is a kind of epimer of fructose. It is a rare monosaccharide that exists naturally in nature but has very little content. The sweetness is 70% of sucrose and the heat is 0.3% of sucrose. With similar taste and volume characteristics to sucrose, it is the best substitute of sucrose in food, known as "low calorie sucrose".
